Recipe: Cold Yogurt and Cucumber Soup - Shawrabat Laban Barida

Serves 6 to 8

5 cups yogurt
1 cucumber, about 6 inches long, peeled and finely chopped
2 cups water
6 tablespoons finely chopped fresh coriander leaves
3 cloves garlic, crushed
1/2 cup almonds, pulverized
2 teaspoons salt
3/4 teaspoon pepper
1/8 teaspoon cayenne

Thoroughly mix all ingredients in a serving bowl; then chill for at least two hours before serving.
