Recipe: Curried Shrimp

Serves about 6

6 tablespoons flour
2 teaspoon curry powder
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon cayenne
2 pounds fresh shrimps, shelled and deveined
4 tablespoons vegetable oil
1 bunch green onions, chopped into 1 inch pieces
2 tablespoons lemon juice
2 tablespoons chopped fresh coriander

Combine flour, curry powder, garlic powder, salt and cayenne, then add shrimp and toss. Set aside.

Place oil in frying pan or wok and heat to high, then stir-fry green onions for 1 minute. Add shrimp, then stir-fry for about 3 minutes or until shrimps are done. Place on a serving platter, then sprinkle with lemon juice. Decorate with coriander and serve.
