Recipe: Sateh Ajam - Broiled Chicken
Serves about 8
2 pounds chicken breasts, cut into thin strips
  5 cloves garlic, crushed
  2 tablespoons peanut oil
  2 tablespoons lemon juice
  2 teaspoons fish sauce
  1 teaspoon chilli powder
  4 tablespoons vegetable oil
  1 medium onion, chopped
  2 tablespoons lime juice
  2 tablespoons soy sauce
  2 tablespoons sugar
  2 tablespoons peanut butter
  1 teaspoon ground coriander seeds
  1 teaspoon cumin powder
  1/2 teaspoon curry powder
  1/2 teaspoon cinnamon
  1 cup coconut milk
Place chicken strips in a bowl, then set aside.
Place garlic, peanut oil, lemon juice, fish sauce and chilli powder in a blender, then blend for a minute. Pour mixture over chicken and marinate for a few hours.
In the meantime, to make the dipping sauce, heat vegetable oil in a saucepan, then fry onion over medium heat for 10 minutes, then stir in remaining ingredients, except coconut milk, and stir-fry for 2 minutes. Stir in coconut milk, then simmer over low heat for 5 minutes. Set aside.
Place chicken strips on skewers, then broil for about 5 minutes on each side or until chicken is done. Serve hot with dipping sauce.
