Recipe: Thai Style Cooked Rice

Serves about 8

3 tablespoons vegetable oil
1 medium onion, finely chopped
4 cloves garlic, crushed
1 tablespoon fresh grated ginger
1 1/2 cups rice, rinsed
1/2 cup coconut Milk
1/2 cup fresh or frozen green peas
2 1/4 cups water
1/2 teaspoon salt

Heat oil in a large saucepan, then stir-fry, over medium/high heat onion, garlic and ginger for 5 minutes. Add rice and stir-fry for a further minute. Add remaining ingredients, then bring to boil. Stir and cover, then reduce heat to low. Cook for 15 minutes, then turn off heat and let sit covered for 20 minutes. Fluff with fork, then serves.
