Recipe: Gai Pad Khing - Ginger Chicken

Serves about 6

All the ingredients should be ready on plates before heating the oil.

2 tablespoons oyster sauce
1 tablespoon fish sauce
1 tablespoon soy sauce
4 tablespoons vegetable oil
1 pound boneless chicken breast, cut into 1/2 inch cubes
5 cloves garlic, crushed
4 tablespoons grated ginger
2 cups mushrooms sliced
1 sweet red pepper, thinly sliced
1 medium onion, thinly sliced
2 tablespoons finely chopped hot red chilli pepper
2 tablespoons finely chopped green onion
1 tablespoon sugar
fresh coriander leaves

Mix oyster, fish and soy sauces, then set aside.

Heat oil over high heat in a wok or frying pan, then stir-fry chicken, garlic and ginger for 1 minute. Add the sauce, then stir-fry for 2 minutes. Stir in remaining ingredients, except coriander leaves, then stir-fry until the chicken is cooked. Place on serving platter, then garnish with coriander leaves and serve piping hot.
