Recipe: Soybean Milk Soup

Serves 4 to 6

4 cups soybean milk
2 tablespoons chopped dried shrimp, soaked for 4 hours, then drained
2 tablespoons soy sauce
2 teaspoons sesame oil
2 teaspoons vinegar
1/2 teaspoon pepper
1/2 teaspoon salt
1/8 teaspoon cayenne
4 tablespoons, finely chopped green onions
4 tablespoons, finely chopped coriander leaves
2 cups cubed toasted bread or Chinese crullers

Place soybean milk in a saucepan and bring to boil over medium heat. Place all ingredients, except green onions, coriander and bread, in a serving bowl. As soon as it boils, pour soybean milk into the bowl, then thoroughly stir in onions and coriander and serve with each diner adding bread cubes to taste.
